VINIFICATION AND MATURATION
The vinification requests a soft pressing to avoid damaging grapes. The fermentation takes place in stainless steel vats at controller temperature between 9° C. and 16° C. for 10-12 days. The wine remains in steal vats for 6 months with periodic Battonages
